Loving Lentils

Lentils are such a diverse ingredient that are used in a variety of dishes and cuisines all throughout the year however, personally they are my favourite base for a meal in autumn and winter!




Why are lentils good for you?

Lentils are brilliant for you due to their high protein, high fibre and low-fat content. They're packed with B vitamins, zinc, potassium and iron (which is very important in vegetarian/vegan diets). Also, they contain polyphenols which help regulate your blood pressure and limit the growth of cancerous cells.


I know everyone just thinks of high protein as a gym necessity to build muscle (which is true) BUT it is also so important in blood cell growth and strengthening bones. Since I started prioritising protein I have more energy and not only do I feel so much stronger but my nails and hair do too!


They're not just good for your body but also for your bank as they are cheap and they have a long shelf life (3 years!!) which is ideal if you are a student, like me! In Tesco, you can get dried Split Red Lentils for £1.80 per kg and Green Lentils for £2.30 per kg.


What are the main different types of lentils?

Red/yellow split lentils:

Take 15 minutes to cook. They absorb loads of flavour and because they don't necessarily keep their shape, they are a really good thickening agent to add a bit more protein to your meal.

Green/Brown lentils:

Take 35 minutes to cook, keep their shape once cooked so are really good as the bulk of your meal. They're also high in soluble fibre and a fantastic source of steady energy supply.

Puy lentils:

Take 25 minutes to cook. These also retain their shape and are unique due to their slight peppery flavour however, they are generally more expensive due to the fact they are grown exclusively in the Le Puy region of France.


TOP TIP!!! when boiling the lentils make sure you spoon off the foam that forms on the water for an even creamier and nuttier taste.
